Sensational Alsatian & Squab with Truffle Sauce

Sensational Alsatian at last night’s dinner at Bar Boulud, the René Muré Pinot Gris Cru Vorbourg Clos St Landelin 2009. Off dry (RS about 30) it was paired with squab en croute.

Oh, oh, thought I, that’s not going to work, the wine’s far too light, far too sweet. Where’s the red? But I was wrong. The squab was incredibly rich, especially given the black truffle sauce, and worked beautifully with  this rich, sweet, bright, fresh mineral-laden wine.
